Ingredients:
- 2 cups of crushed cookies (like graham crackers or digestive biscuits)
- 7 tbsp unsalted melted butter
- 2 tbsp white sugar
- 1 cup caramel (cut into small pieces)
- 2 teaspoons milk or almond milk
- 1 cup milk chocolate chips
- 2 teaspoons shortening
- Flaky sea salt for sprinkling
Instructions:
1. Preheat the Oven
Set your oven to 350°F (175°C).
2. Prepare the Crust
In a square 8×8-inch baking pan, combine the crushed cookies and sugar. Stir in the melted butter and mix until everything is well coated. Press the mixture firmly into the bottom of the pan, using a spoon, your palm, or the bottom of a cup to compress the crust.
3. Bake the Crust
Bake the crust for 20 minutes or until golden. After baking, remove the pan from the oven and allow it to cool in the refrigerator for at least 20 minutes. (Avoid placing a hot or warm pan directly into the freezer.)
4. Melt the Caramel
Place the caramel and milk (or almond milk) in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the caramel is fully melted and smooth. Once melted, spread the caramel mixture evenly over the cooled crust, being careful not to tear the crust.
5. Chill the Caramel
Refrigerate the caramel layer for at least 20 minutes or until it sets firmly.
6. Prepare the Chocolate
Microwave the milk chocolate chips and shortening together in 30-second intervals, stirring after each, until completely melted and smooth.
7. Coat with Chocolate
Once the caramel layer has cooled, pour the melted chocolate over the caramel and spread it evenly. Allow the chocolate to cool for a few minutes before sprinkling with flaky sea salt.
8. Refrigerate
Place the pan back in the refrigerator to fully chill and set, about 30 minutes.
