Ingredients:

  • 12 chicken pieces
  • 2 cups amasi (fermented milk or buttermilk)
  • 2 tbsp oregano
  • 1 tsp Dijon mustard
  • 30 ml chicken seasoning
  • 20 g salt (divided)
  • 3 cups flour
  • 2 tbsp cayenne pepper
  • 1 tbsp thyme
  • 2 tbsp paprika
  • 2 tbsp chili flakes
  • 30 ml BBQ seasoning
  • 1 liter oil (for frying)

Instructions:

  1. Marinate the Chicken
    • Combine the chicken pieces with amasi, oregano, Dijon mustard, chicken seasoning, and 15 g of salt. Mix well.
    • Cover and marinate in the refrigerator for at least 3 hours, preferably overnight, to allow flavors to develop.
  2. Prepare the Coating
    • In a large bowl, mix flour, cayenne pepper, thyme, paprika, chili flakes, BBQ seasoning, and the remaining 5 g of salt.
  3. Coat the Chicken
    • Remove the chicken from the marinade and discard the liquid.
    • Dredge the chicken pieces in the seasoned flour mixture, ensuring an even coat.
    • Let the coated chicken rest on a wire rack for at least 20 minutes to set the coating.
  4. Fry the Chicken
    • Heat oil in a large pan over medium heat.
    • Dredge the chicken in the flour mixture again for extra crispiness.
    • Fry the chicken in batches until golden brown on both sides, approximately 15 minutes per batch.
  5. Finish in the Oven
    • Preheat the oven to 170°C (340°F).
    • Transfer the fried chicken to a baking tray and bake for 20–25 minutes to ensure it is cooked through.
  6. Drain and Serve
    • Place the finished chicken on paper towels to drain excess oil.
