Ingredients:
- 4 cod fillets (about 4-6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 pint cherry tomatoes (or 2 cups diced tomatoes)
- 1/2 cup white wine (or chicken broth)
- 1/2 cup fresh lemon juice (about 2 lemons)
- 1 teaspoon lemon zest
- 1 tablespoon capers (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Prepare the Cod:
- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Sear the Cod:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the cod fillets and cook for 3-4 minutes on each side, or until the fish is golden and cooked through.
- Remove the fillets from the skillet and set aside on a plate.
