Ingredients:

  • 4 cod fillets (about 4-6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 pint cherry tomatoes (or 2 cups diced tomatoes)
  • 1/2 cup white wine (or chicken broth)
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • 1 tablespoon capers (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Cod:
  • Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.

  • Heat the olive oil in a large skillet over medium-high heat.
